Apiņi satur oksidētas alfa skābes - humilinonus. To rūgtums ir 66% no iso-alfa-skābju (tās rodas pie augstas temp. - vārot) rūgtuma, t.i. ja analīzes gala IBU uzrādīs 60, tad pēc sajūtās būs 40 (''maigāks'' rūgtums). Humilinoniem ir arī stipri polārāki tāpēc daudz labāk šķīst ūdenī/alū - tik labi, ka tas notiek pie zemas (istabas) temp. - tātad kaķojot. Alfa skābes arī dod rūgtumu kaķī, bet tikai 10% apjomā. Īpatnēji, ka kaķojot rūgtāku alu iegūtais rūgtums būs nedaudz zemāks, nekā piem. 10IBU alū (apiņu daļiņas ''uzsūc'' iso-alfa-skābes) - robeža ir ap 25IBU, t.i. 20IBU alu kaķojot, tas liksies rūgtāks, bet 30IBU alus - mazāk rūgts, nekā bez kaķa, bet jāņem vērā, ka apiņi ar augstāku humilinonu saturu dos savu rūgtumu un kompensēs iso-alfa-skābju samazinājumu. Humiliononu saturs ir lielāks apiņiem ar augstāku HSI (Hop storage index) - kas norāda, cik daudz alfa un beta skābju degradējas laika gaitā (otrajā saitē ir smuka tabula, kur apiņi sakārtoti pēc HSI, piem. Amarillo = 20, bet Cascade = 50). Kaķis arī nedaudz paaugstina alus ph līmeni, kas savukārt paaugstina rūgtuma uztveršanu.
Par IBU noteikšanu - tests nosaka iso-alfa-skābes (100% rūgtuma), alfa skābes (10% rūgtuma) un humilinonus (66% rūgtuma), bet nespēj tos nošķirt vienu no otra. Plus, kādi 12% IBU testā nāk no citām apiņu daļiņām, kuras nedod rūgtumu.
